[RECIPE] Beef Enchiladas with Cheese

Rich in flavor and sinful to the bite, enchiladas are one of the easiest Mexican dishes to make when you’ve got guests coming over. They’re also a good dinnertime option if you’re craving for something new but don’t want to bother with cleaning up numerous pots and pans in your kitchen.

Here’s a simple step-by-step guide to wow your friends and family with your new culinary creation!

What you need:
500g of minced beef
1 cup of mixed vegetables
1/2 large onion diced
1 cup of tomato puree
1 tsp cumin powder
1/2 tbsp chili flakes
8 small soft tortillas
1/2 cup of shredded mozzarella cheese
Salt and Pepper to taste

Instructions:
1. In a non-stick pan, pour three tablespoons of olive oil and stir-fry onions until soft and then add in the minced beef. Break them into smaller lumps with a wooden spatula. Sprinkle some salt and pepper to taste.

2. When it’s cooked, toss in the mixed vegetables, let it cook for a minute, and then pour in the tomato puree.

3. As the sauce simmers, stir in the cumin powder and mix well until no clumps are left. Add in chili flakes and let the sauce simmer for five minutes.

4. While the sauce simmers, heat up the tortillas in the microwave for 30 seconds in medium heat. Also heat up your oven to 180 degrees.

5.When the minced meat is cooked, turn off the heat. Grab a tortilla sheet, scoop two or three tablespoons of the mince and place it in the center of the tortilla, and spread it vertically. Add a few flakes of mozzarella cheese, fold it in the center and place it on a rectangular baking pan.

6. Repeat the same steps with the rest of the tortillas, placing them close to each other. When you’ve completed it all, use a large spoon and pour the remaining sauce over the folded enchiladas. If you have some remaining sauce, you can use it as a dip for nachos!

7. Sprinkle more cheese over the enchiladas and put it in the oven for about five to 10 minutes until the cheese melts completely.

8. When it’s cooked, bring it out of the oven and let it cool for a minute. Serve on a plate with guacamole and sour cream; or jalapeno peppers if you’re feeling adventurous!

If you don’t like beef, you can always substitute the mince meat with chicken, instead. All the ingredients mentioned should be available in your nearest supermarket or local grocer.
