While some of you are aspiring Nigella Lawsons in the making and whipping up 5-star meals seem like second nature to you, the rest of us are unfortunately not so blessed with such skills. For that reason, we’d always settle on something that’s extremely easy and quick to make and this is when the role of the microwave comes into place. Although it may be a little unhealthy, we believe that everyone deserves a treat once in a while so here is a list of some of our favourite microwave mug snacks we think you should try. Even if you’re a culinary expert, give these a go to see how they fare!
Breakfast Quiche
Recipe: 1 egg, 1 ½ tablespoons milk, salt, ground black pepper, ¼ of a bagel or French bread, 2 teaspoons of cream cheese, ½ slice prosciutto or ham, fresh thyme leaves and Dijon mustard
Directions: Firstly, beat the egg and milk together with a fork in a mug, adding salt and pepper to taste. Tear the bread into dime-sized pieces and add it in the mixture with the cream cheese. Next, cut the prosciutto into smaller pieces, add it into the mixture and sprinkle with thyme. Microwave on high until eggs are cooked, then garnish with some mustard and fresh thyme.
Banana Bread
Recipe: Cooking spray, 3 tablespoons flour, 1 tablespoon plus 1 teaspoon sugar, 2 tablespoons brown sugar, 1/8 teaspoon salt, 1/8 teaspoon baking powder, 1/8 teaspoon baking soda, 1 egg, ¼ teaspoon vanilla extract, 1 tablespoon vegetable oil, 1 tablespoon milk and 1 ripe banana (mashed)
Directions: Spray a mug with cooking spray and then whisk the flour, sugar, salt, baking powder and baking soda. Add the egg and combine until fully incorporated with the dry ingredients. Next, mix in the vanilla, oil, milk and mashed banana. Microwave for three minutes and you’re done.
Mac & Cheese
Recipe: 1/3 cup pasta, ½ cup water, ¼ cup 1 percent milk and ½ cup shredded cheddar cheese
Directions: Combine the pasta and water in a mug and microwave on high for two minutes, then stir. Repeat this for another two to four minutes, stirring at each 2-minute interval. The water will be absorbed and the pasta will cook through. If the pasta isn’t fully cooked, add in a little water and microwave again. After the pasta is done, stir in the milk and cheese, then microwave for another minute. Stir and eat up!
Chocolate Peanut Butter Mug Cake
Recipe: 2 tablespoons butter, 2 tablespoons peanut butter, ½ teaspoon vanilla, 1 egg, 2 tablespoons sugar, 2 tablespoons flour, 3 tablespoons cocoa powder, 1/8 teaspoon salt, 1/8 teaspoon baking powder, 3 tablespoons chocolate chips
Directions: Melt the butter in a small dish and mix well after adding the peanut butter. Then, in the mug, mix together the vanilla, egg and sugar until well combined. Mix the flour, cocoa, salt and baking powder then pour in the peanut butter and butter mixture. Mix well and stir in chocolate chips. Microwave for one to two minutes and then top your mug cake with a dollop of peanut butter.
“Baked” Apple and Banana Oatmeal
Recipe: ½ cup quick cooking oats, 1 tablespoon ground flax seeds, 1 egg, ½ cup milk, 1/3 of a banana (mashed), ¼ teaspoon cinnamon, ½ of an apple (chopped) and 2 tablespoons of honey
Directions: Add the oats, flax seeds, egg and milk in a mug and stir well with a fork. Then, add the banana, cinnamon, apple and honey. Stir again until fully combined. Cook in the microwave on high for two to three minutes and fluff up your oatmeal with a fork.
