Here are some fun and easy summer cocktails to keep you refreshed. After all, it’s an excuse to start day-drinking during our favorite time of year!
Pimms
1 part Pimms No1
3 parts lemonade
Mint, cucumber, orange and strawberries to preference
Fill a jug with 200ml of Pimms and top up with lemonade then add cut fruit and ice and mix together. Makes 4-5 long drinks.
Bellini
1 part peach puree
2 parts champagne
Mix together and serve in champagne flute. Add ice for crisp coolness.
Champagne Punch
3 tbs. Grenadine
3 tbs. Cointreau
2 tbs. Brandy
1 3/4 Cups of champagne
Seasonal fruits to preference
Combine all wet ingredients in a punch bowl, add cut fruit and a lump of ice to the bowl to keep all of the punch cool without needing to water down your own personal servings.
Summer Fruits Sangria
6 Cups of assorted fruits of choice (berries, peaches, citrus fruits)
1/4 Cup of thinly sliced ginger
1 to 1 1/2 Cups of basil or mint leaves
1/2 Cup of Cointreau
1 Bottle of White Wine (something that is crisp like Sauvignon Blanc or Pinot Grigio)
3 tbs. Fresh lemon juice
Ice
Instructions: In a large pitcher, combine the fruit, ginger, basil and mint with the orange liquor. Mash with the back of a wooden spoon until flavours are released from the mint and basil by bruising the leaves and juices release from the fruit. Add the wine and lemon juice and stir. Refrigerate for an hour so flavours infuse. Serve with ice.
Peach and Blackberry Muddle
4 slices of peach
6 blackberries
2 sprigs of mint
1 1/2 teaspoons of honey
1 tbs. Fresh lemon juice
2 ounces of Bourbon
Soda water
Ice
Mash 2 peach slices, 3 blackberries, mint, honey and lemon juice with a wooden spoon until fruit juices begin to release. Add the bourbon and mix. Add the remaining peach slices and blackberries. Fill glass with ice and top it up with the soda water.
