A Peek Into Doutor Coffee With Master Roaster Masahiro Kanno

Having dedicated his life to mastering the art and science of coffee roasting, Masahiro Kanno recently shared the intricacies of the perfect blend and the third wave coffee culture here in Malaysia.

The third wave or artisanal coffee culture is not totally unknown here but is definitely a trend that is sweeping across Asia, particularly in Malaysia where many independent coffee cafes are springing up. It places emphasis on the science behind every cup – from the choice of soil to the plantation where the bean is harvested to the skills needed to roast the beens and grinding it down to brewing the perfect cup of coffee.

Masahiro Kanna is a well-respected coffee connoisseur and was an international jury member for the Cup of Excellence for 3 consecutive years. Masahiro Kanno was 7 when he tasted his first coffee. A relative of his sent beans from Hawaii and as his father prepared to take a first sip, he offered Kanno San some. Though a shocking experience for a 7 year old, it was just the beginning of Kanno San’s love and dedication for coffee.

As a coffee connoisseur, his love and passion in what he does is demonstrated in the attention to detail he pays in whipping up an excellent cup of fresh coffee. This same principle is what Mr. Kanno’s coffee formula will reflect in Doutor, a soon to be opened popular Japanese coffee chain in Malaysia.

The Doutor chain in Malaysia is designed to cater to the different Malaysia taste buds with a beverage menu that not only offers Espresso-based coffee, mixed blends, and hand-brewed single origin coffee, it also whips up non-coffee beverages. Besides beverages, the Doutor chain will also serve hot food choice that are prepared fresh and are inspired by Japanese elements and ingredients. There are also a range of cakes, desserts and pastries.

Giving credit to Mr. Kanno’s years of dedication to Doutor, a coffee laboratory, aptly named Kanno Coffee in Tokyo, Japan, was built in his honour. The ‘labo’ as it is affectionately known, allows him to continue with his quest to seek, and produce higher quality roasts for the Doutor chain.

Doutor promises to introduce the ‘fresh quality coffee’ concept with a touch of Japanese flair to Malaysian cafe goers. The first Doutor outlet will be open in Aeon Mall Tebrau City, Johor Bahru on 23 November 2016. For Klang Valley dwellers, an outlet will be opened in Sunway Velocity Mall, Kuala Lumpur on 8 December 2016 and also in Aeon Mall Bukit Tinggi, Selangor on 15 December 2016.
