Pasta La Vista! Research Shows That Reheated Pasta Is Healthier Than Its Fresh Version!

I’m a huge fan of pasta. If I could eat only one thing for the rest of my life, it would be pasta. Spaghetti, macaroni, penne, fusilli, you name it – I would die for pasta. Even my ex-boyfriend was tired of me because I always suggested pasta for dinner.

When it comes to eating the delicious Italian signature food, freshly-served would be the only way, right? Well, at least for some people, because there’s research showing that eating reheated pasta is actually way healthier and does wonders for your body. This is the kind of news we need in our lives now that all these easy pasta sauces are going viral on TikTok, right? Just in time! 

Most of the sugars pasta contain don’t get released into your body, and therefore you take in fewer calories while essentially eating the same food. This is because resistant starch is resistant to enzymes in our body, making it indigestible

So how did this even come about in the first place? It all started during the weekend when I stumbled across a British show called Trust Me, I’m A Doctor. During that particular episode, a Doctor from an English University had volunteers eat hot, cold and reheated pasta on alternate days, using the same sauce. What they found was that the cold pasta saw a smaller spike in blood glucose levels, while the reheated pasta showed an even smaller spike – 50% less than freshly cooked pasta.

In short, cooling then reheating pasta turns the regular starch in the food into something called “resistant starch”, which means most of the sugars the pasta contains don’t get released into your body, and therefore you take in fewer calories while essentially eating the same food. This is because resistant starch is resistant to enzymes in our body, making it indigestible. Moreover, resistant starch has other benefits, too. It operates similarly to fibre in our body, helping to improve digestion, and when it gets to your lower gut it feeds beneficial bacteria which can help to produce chemicals that help our immune systems and cardiovascular health.
