Sweet potatoes are downright amazing – the root vegetable is packed with vitamins, minerals and is low in fat. There’s also no wondering why people are losing it over the latest breakfast trend that is sweet potato toast.

Essentially used as a substitute for bread, sweet potato, sliced into slender chunks, can be cooked in a toaster until it’s soft. After that, top it with anything sweet or savoury for a refreshing breakfast that’s ultimately healthier.
