Billie Eilish’s Peanut Butter & Chocolate Chip Cookies
Grammy winner Billie Eilish showed off her cooking skills in a series of stories she posted on her Instagram. In her stories, she shared her favourite chocolate chip cookie recipe that is both vegan and gluten-free! She also plugged her new vegan chocolate bar called “Happier Than Ever” bar, which was used in her cookies as well. Here’s the recipe:
- Chocolate chips
- 1 cup brown sugar
- 1 cup peanut butter
- 2 teaspoons vanilla extract
- 1 cup oat flour
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 1/4 cup almond milk
Firstly, you’ll need to preheat the oven to 350 degrees. Next, mix the brown sugar and peanut butter in a mixing bowl for a minute before adding the vanilla extract. In a separate bowl, add your oat flour, baking soda, and salt. Then, combine the dry and wet ingredients and add 1/4 cup of almond milk and chocolate chips. Lastly, place dollops of cookie dough on a baking sheet and press them down with the back of the fork, and place in the oven for 10 to 12 minutes.
Kristen Bell’s Everything Cookies
Kristen Bell shared her ‘Everything Cookie’ recipe on The Today Show back in 2017, and apparently, she’s quite the baker! These cookies are gluten-free, but you can make them with either gluten-free or all-purpose flour. Wanna make these Everything Cookies yourself? Here’s the recipe:
- 4 tablespoons unsalted butter, softened
- 1/4 cup unsweetened applesauce
- 1/2 cup light brown sugar
- 1/4 cup agave nectar
- 1 teaspoon vanilla extract
- 1 1/4 teaspoons ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 teaspoon vinegar
- 1 large organic egg
- 1/2 teaspoon baking soda
- 3/4 cup gluten-free flour or all-purpose unbleached flour
- 1 1/2 cups rolled oats
- 2/3 cup semisweet chocolate chips
- 2/3 cup butterscotch chips
- 1/2 cup walnuts, coarsely chopped
Firstly, you’ll need to preheat the oven to 180°C and line two baking sheets with parchment paper. Next, mix the butter, applesauce, sugar, agave nectar, vanilla cinnamon, nutmeg, salt, and vinegar until fairly smooth before you beat in the egg until smooth. Add in the baking soda and flour, mix well. Then, combine the oats and both kinds of chips into the mixture. Place the cookies onto the baking sheets and make sure to space the cookies and leave plenty of room because they spread, and bake the cookies for 12 to 14 minutes. To make sure they cook all the way through, reverse the pans halfway (top rack to bottom and bottom to top).
Meghan Markle’s Zucchini Bolognese
If you’re looking for something that’s both healthy and delicious, you should definitely try out Meghan Markle’s Zucchini Bolognese. She revealed that she loves making a three-ingredient zucchini pasta sauce in an interview she did with Delish in 2018. Though it’s still debatable whether this recipe is considered ‘easy’ since the pasta sauce takes 4 hours to make! Here’s the recipe:
- 5/6 zucchinis
- 1 yellow onion, chopped (optional)
- 1 tablespoon olive oil.
- 1 chicken bouillon cube.
- 1-2 cups of water.
- 1 package penne or rigatoni
Firstly, add the zucchini, onion, bouillon cubes, and water in a large slow cooker. Then, set the timer to cook for four hours on low heat, stirring once or twice during that timeframe. The zucchini will start to brown and get mushy. Then, at the 3 hour and 40-minute mark, you can start cooking your pasta. Once your pasta is cooked, you can season your zucchini sauce with some salt and pepper, and serve immediately over your pasta.
Beyoncé’s Guacamole
If you’re craving some chips with some delicious dipping sauce, you should definitely try out Beyoncé’s famous guacamole recipe. And you’ll only need a few ingredients for this one:
- 2 avocados
- 1 small onion
- 1 clove garlic
- 1 small tomato
- 1 1/2 tablespoons lime juice
- Salt and pepper
For this, you would need to peel the avocados and remove the pit. Mash it with a spoon in a large bowl. Then, add your chopped onion, garlic and tomatoes to the avocado. Then, squeeze in some lime juice and season with salt and pepper. Make sure to mix it well!
Snoop Dogg’s Bow Wow Brownies
Before you say anything, no, it doesn’t contain any marijuana. From his cookbook ‘From Crook to Cook’, Snoop Dogg introduces his staple Bow Wow Brownies recipe. Here’s what you’ll need:
- 90g plain flour
- 1/4 tsp baking soda
- 1/2 tsp salt
- 100g granulated sugar
- 3 tbsp unsalted butter
- 2 tbsp whole milk
- 450g milk chocolate morsels
- 2 large eggs
- 1/4 tsp pure vanilla extract
First off, you’ll need to preheat the oven to 165°C, and butter a 20 x 20 cm baking pan. Mix the flour, baking soda, and salt together. Next, in a saucepan over medium heat, combine the sugar, butter, and milk until it boils. Remove the pan from the heat and add 270 grams of chocolate morsels, and stir until smooth. After you’ve added your eggs and vanilla to the chocolate, stir until well mixed and smooth. Then, gradually mix your flour mixture into the chocolate. After you’re done with your mixture, pour it into your pan and spread it evenly. You can also sprinkle the remaining chocolate on top. Lastly, bake for 25 to 30 minutes, while rotating the pan halfway through that timeframe until the brownies are set.
