An Evening Of Pure Chocolate Indulgence At Magnum Chocolate Masterclass

If you indulge in chocolate ice creams until you can’t eat any more and have been trying to curb your cravings, then we should probably warn you that this article contains a lot of words that will make you thirst for some fine cocoa.

Last Thursday, we had an evening of Pure Chocolate Indulgence at Magnum Chocolate Masterclass, where guests were taken on a journey of chocolate appreciation, identifying key aspects that makes Magnum chocolate premium and unique in taste, ensuring the very best indulgence of the quality dessert with every bite.

The masterclass was led by Chef Amanda Lim, a Malaysia-based expert chocolatier from Callebaut, where participants enjoyed a bean-to-bar experience with the chef, uncovering the secrets behind Magnum chocolate’s exclusive recipe and its intense tasting notes to its clean, sharp snap.

For more than 25 years, chocolate expert brand, Magnum, has been using the most indulgent chocolate in its ice cream bars made from the finest cocoa products, in which the exclusive one-of-a-kind recipes behind each variety of Magnum chocolate is specially crafted to give the signature crack, marking the assurance of quality.

 

First, the cocoa pods which are sourced from Barry Callebaut, will go through a fermentation process for five to seven days to develop their aroma, a key step in developing the flavour characteristics of quality chocolate. Only the finest beans will make it to the roaster, where the beans are roasted in its shell to retain its full flavour.

The cocoa nibs collected from the beans after roasting will then be grinded into a very fine liquid, cocoa mass, naturally bitter in taste. Processing the cocoa mass will produce cocoa powder and cocoa butter, the most expensive ingredient in chocolate that melts readily at body temperature, a good indicator of premium quality chocolate.

Next, the cocoa butter and powder will go through a meticulous conching process of heating and mixing all ingredients to perfect the characteristics of specific chocolate. Magnum’s velvety ice cream will then be dipped into the one-of-a-kind chocolate bath to give its thick, glossy coating and signature crack.
