Every time you start thinking about what cookies to bake to feed a Christmas dinner crowd, something easy, snappy, and ones that requires the least prep and washing up comes to mind. So really, nothing beats a good peanut butter cookies recipe.
It has little ingredients (hence easy on your Christmas dinner budget), simple steps, you don’t have to spend a lot of time baking them, and it passes off as a good pre-dinner snack. Also, it’s entirely kid-friendly so be prepared to make lots for them!
You will need:
2 cups peanut butter
2 cups white sugar
2 eggs
2 teaspoons baking soda
1 pinch salt
1 teaspoon vanilla extract
Method:
1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2. In a medium bowl, stir peanut butter and sugar together until smooth. Beat in the eggs, one at a time, then stir in the baking soda, salt, and vanilla.
3. Roll dough into 1 inch balls and place them 2 inches apart onto the prepared cookie sheets. Press a criss-cross into the top using the back of a fork.
4. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
Note: You may also choose to press some M&Ms into the dough before you chuck it into the oven. We’re thinking red and green M&Ms! It goes really well with the peanut butter cookies and it adds colour to the otherwise mundane looking snack.
