We all have our favourite Chinese New Year cookies. Our personal favourite is the peanut cookies! It’s nice, crumbly and it melts in your mouth. Not to mention extremely addictive – you start with one and before you know it, half the container would’ve vanished.
Also, it’s really easy to bake so that scores extra points for us women who are going to be super busy preparing Chinese New Year goodies for relatives and friends. Don’t believe us? Try it!
You will need:
4 cups ground roasted peanuts
1 cup powdered sugar (icing sugar)
1 cup peanut oil
2 cups all-purpose flour
2 tablespoons shortening
1 egg yolk, beaten slightly for egg wash
Method:
1. Mix the ground peanuts, sugar, oil, shortening and flour together until well combined.
2. Shape into small balls. Use a fork or the palm of your hand to flatten it slightly.
3. Brush the top with the egg wash and bake at 350 degrees F (180 degrees C) for 20 minutes or until brown.
4. Remove from the oven and let cool.
