In celebration of the upcoming Mother’s Day in May, Estates & Wines has curated a unique dining experience with none other than the esteemed French Enfin by James Won, whereby three of its exquisite wines are paired with a specially crafted degustation menu to highlight and complement the vino’s elaborate flavours.
Not only does the pairing mark a significant milestone for Estates & Wines, the carefully thought-out degustation menu also debuts the finesse of Enfin by James Won’s sous chefs Chef E.H Poh and Chef Oscar Wo for the very first time, after multiple years of training under the helm of renowned chef and restaurant owner James Won himself.
Paired with the bespoke menu are three ICON wines including the rich Cape Mentelle Cabernet Sauvignon 2013 from Australia, the elegant Cheval des Andes 2012 from Argentina and the latest addition to Estates & Wines’ selection, the bold Cloudy Bay Te Wahi 2014 from New Zealand that has a firm tannin structure with a long finish.
After the freshly baked Artisan Levain bread and butter served with three salts comes the amuse bouche of earthy Truffe à la Enfin. To go with the Calamares tagliatelle, escargot, molluscs, red pepper and red wine reduction that is packed with umami flavours is the Cloudy Bay Te Wahi 2014 Pinot Noir with a sweetness and acidity that balances out the strong savouriness.
A palate cleanser comes as a treat of Petit pois and wasabi ice cream, before the first main of Yam pillows, Bentong ginger duck ragout, Roquefort crème, dark chocolate and wild chilli is served. The intense depth of piquant flavour profile goes hand in hand with the Cape Mentelle Cabernet Sauvignon 2013 that exhibits a fresh and fine finish.
The second main presents two options – the Australian beef striploin, pommes puree, lack garlic, smoked chilli, lemon & condiments or the Lamb French rack, mushroom ketchup, minted pois, burdock chips, au jus – offered alongside the dense yet silky Cheval des Andes 2012 before finishing off with the delectable Chocolate and Cheese.
