Last week, a few of us from the Lipstiq editorial team got the chance to cook with Philips and Malaysian celebrity chef, Marina Mustafa. Chef Marina is a mother of four and a writer of two cookbooks and has recently published her debut cookbook, Memorable Recipes for Malays Occcasions.
We were meant to cook four traditional Malay dishes within an hour. To be frank, it was a little intimidating at first, but Chef Marina assured that it will be incredibly easy since we’ll be using three innovative kitchen appliances by Philips – the Philips Viva Electric Pressure Cooker HD2139, the Philips VIVA Airfryer HD9220, Philips Avance Soymilk Maker HD2072.
“As a mother, I want my children to have the healthiest meals without disappointing their taste buds, especially during the festive season of Hari Raya,” she said. “I was very intrigued when I heard about the Philips kitchen appliances needed nutrition from the fresh ingredients. Plus, it is so easy to use!
The Philips Viva Electric Pressure Cooker offers stress-free and healthier cooking using fresh ingredients. It also retains the vitamins and minerals of vegetables and meats, so, you won’t lose any of the nutritional value in your meal. Here, Chef Marina teaches us how to create two traditional Hari Raya dishes using the Philips Electric Pressure Cooker – Nasi Dhal and Ayam Masak Merah.
NASI DHAL
Ingredients:
4 cups of Basmathi rice
3 cups of water
1/2 cup of dhal (lentils) soaked for 30 mins
6 cardamom
6 cloves
2 star anise
1 cinnamon
2 inches of ginger, blended in 1 cup of water
2 tsp of salt
2 tbsp ghee (optional)
1/4 oil (You can use olive oil instead of palm oil, if you prefer)
3 pandan leaves
1/2 cup of evaporated milk mixed with 1 tablespoon of lime juice (Thairub/buttermilk)
2 tbsp fried onions
1. Place Basmathi rice into the Philips Electronic Pressure Cooker.
2. Add in lentils, spices, along with sliced onions, garlic and pandan leaves.
3. Pour in ginger paste and water.
4. Add in the salt, and then mix the ghee and pour the oil in.
5. Press ‘RICE’ and then ‘START’ on the Philips Electronic Pressure Cooker.
6. After the rice has cooked in 14 minutes, pour in the Thairu on top of the rice.
7. Latch the cover back on, and leave it for 5 minutes before serving.
After preparing the rice, we decided to make Ayam Masak Merah using the same Philips Electronic Pressure Cooker. Here’s what you need to do:
AYAM MASAK MERAH
Ingredients to blend
3 large onions
4 cloves of garlic
1 inch of ginger
Main ingredients
1 whole chicken, sliced in 12 pieces
6 cardamom
6 cloves
2 star anise
1 cinnamon
1/2 cup of tomato puree
2 tbsp chili paste
2 tomatoes, sliced in four
1 large carrot, sliced into 2-inch sticks
1 cup of yogurt
1 cup of water
1 1/2 cup of salt
1 tspn sugar
1/2 cup of green peas
1 tbsp coriander, chopped
2 tbsp fried onions
1. Place all ingredients into the Philips Electronic Pressure Cooker
2. Press ‘CHICKEN’ and then ‘START’.
3. 25 minutes once the dish is cooked, add in the yogurt and stir gently.
4. Then throw in the peas and coriander before serving.
Now that we have our main course completed, it’s time to balance it out with some something sweet and delectable! Using the Philips Airfryer, you can recreate a traditional Malay dessert without having to use an oven. So you can enjoy your favorite fried goods with a maximum of 80% less fat as no oil is added. Chef Marina teaches us how to make the Seri Kaya Bakar, and it’s remarkable just how fast and easy it is to make!
SERI KAYA BAKAR
Ingredients
3/4 cup of flour
1 cup of thickened coconut milk
1 cup of pandan juice. Blend 5 leaves with 1/4 cup of water and keep the juice.
1/2 tsp green food coloring
4 large eggs, whisked
3/4 cup of castor sugar
2 tbsp ghee, melted
1/2 tsp cinnamon powder
1 tbsp raisins
1. Whisk eggs in a large bowl and combine with sugar, green food coloring and pandan juice. Mix until smooth.
2. Combine the flour and coconut milk until the mixture until no clumps are visible.
3. Turn on the Philips Air Fryer and heat it up at 170°C. Once it’s warm, place a square tin foil in the Airfryer and add in the ghee until it melts.
4. Then, pour in the Seri Kaya batter until 3/4 full.
5. Let the mixture cook in the Philips Airfryer for 35 minutes.
6. Once it’s cooked, sprinkle some cinnamon powder on it and raisins too. Leave it in the Airfryer for another 5 minutes and then serve.
Another delicious dessert to have during Hari Raya is the Pengat Barli. A sweet and milky paste made of barley grains and coconut milk, and a sweet hint of rose. All you need is the Philips SoyMilk Maker and you can enjoy a bowl of this sweet, comforting dessert.
PENGAT BARLI
Ingredients
1/4 cup of barley
1/2 cup of gula Melaka
2 cups of water
1 cup of thickened coconut milk
1/2 tsp rose essence
1. Combine barley, gula Melaka, water and rose essence in the Philips SoyMilk Maker.
2. Select ‘FIVE GRAIN’ mode and then ‘START’.
3. After 25 minutes, the Pengat Barli will be ready to be served.
