We’re all looking for something refreshing and healthy during these warm months. Most of us think watermelons are the best choice for summer fruits. It’s true because of it’s high antioxidant and low calories in addition with multiple vitamins.
Fresh mozzarella cheese is used as an ingredient to add sensory appeal, mild flavour, and nutritional value to foods because it doesn’t taste much as heavy as blue cheese. Mozzarella cheese is high in protein and each serving provides a source of calcium, phosphorous, zinc and Vitamins B12 and A.
Creative blogger Natalie Paramore shares a special summer salad recipe, with a combination of juicy watermelon, mozarella and some herbs to cool us down this season! The ingredients needed are pretty straight forward and it can be done within 10 minutes!
Ingredients (serves 4 to 6 people)
– half a watermelon
– fresh mozzarella
– 2 tablespoons fresh mint
– 1 tablespoon garlic chives (substitute 1 tablespoon regular chives and 1 teaspoon garlic powder)
– 2 teaspoons salt
First, remove the watermelon seeds before you start cutting. Then, cut both fresh watermelons and fresh mozzarella into small dices. Make sure the watermelon dices is thicker than mozarella, probably 1 inch though. Leave it aside once you’ve done the first step.
Next, wash and pat dry the fresh mint. Remove the mint leaves from the stems and mince the mints and chives. Combine diced watermelons, diced mozzarella, herbs and salt together into a mixing bowl. You may add some balsamic vinegar if you like.
The salad is better served if it’s chilled. It’s light and refreshing, perfect for the beach.
